BACON + AVOCADO + HERBED GOAT CHEESE ON CIABATTA.

As noted in great detail here and here, we enjoyed a plethora of good eats on our Cali trip. I still can’t get over how fantastic some of those meals were, one being lunch at Sonoma’s Sunflower Caffe. I was compelled to recreate this simple, little sandwich combining some of my fave foods: crispy bacon, creamy goat cheese, and fresh sliced avocado. Holy yum.
- Ingredients (serves 2)
- – 8 slices of bacon, cooked
- – 2 ciabatta rolls, lightly toasted
- – 2 oz. goat cheese
- – 1 tbsp. fresh basil, chopped
- – Cracked pepper
- – 1 small avocado, sliced

1.) Combine goat cheese, basil, and a few grinds of cracked pepper in a small bowl and mix until incorporated.

2.) Spread goat cheese mixture liberally on both sides of the ciabatta rolls.

3.) Place four slices of crispy bacon (broken in half) on the bottom of each ciabatta.

4.) Top each with half of the avocado slices.
5.) Put the lid on it and do your best not to devour it like a convict. Seriously, it’s so good you’ll want to protect it…with your life.

I’ve made these a few times now since we got back from CA and I’m not even close to being tired of them yet. The best bit is very little effort is needed for a lot of deliciousness in return. If you like, you can do what the Sunflower Caffe did and add some arugula tossed in balsamic vinaigrette on top. Either way, I promise you will be sufficiently mindblown. Try it and see!

I’m seriously in love with avocado! I don’t eat bacon, but I have recently discovered goat cheese and love that too, so I might have to make this soon. Yum.
